A Little Good Competition...

For anyone who saw the competition last night, knows my mac didn't take home the big prize, but I must say, this is by far my favorite mac and cheese recipe. Nothing fancy, just flat out delicious, and hey, it made it on Food Network! My family loves this!

It was fun to see my husband and son in the front row cheering me on, priceless actually. It really was a great time in LA, meeting all of the other finalists and participating in the competition. It was very game show like and brutal watching those judges! I love the dramatic "Ahhhh" when the lights go out on our kitchens, too funny.

I must say, that Brett's French Onion Soup Mac Recipe is right up my alley, I really thought he would have won the show, his recipe was beautiful. I hope to try it soon.

My Shrimp Won A Prize at Southern Living Cook-off!

The Southern Living Cook-off is held every year. I was so excited to be a finalist this year. 15 of us were duking it out for 100K big ones. I was able to win my category and took home 10K. What a great time they showed us in Birmingham. Click on the link and check out all of the yummy winners.

I was so excited to get invited to this one. They pick 51 finalists, 1 per state. Food Network was there are I was one of the 5 finalists they chose to profile through the competition. Unfortunately I didn't win the $50K, but had a great time as usual!

S. Pittsburg TN is the coolest little town. The whole town comes out to the National Cornbread Festival every year. I highly recommend seeing this festival sometime. Great food, nice people and a great cook-off!

These burgers are seriously delicious. A little pricy, but worth every cent! Great for entertaining!

Cooks Like A Californian Recipe Contest Win 2006

Spicy Asian Honey Chicken Tenders

2 Tablespoons extra virgin olive oil
12 uncooked chicken tenders

1 jalapeno, seeds removed
1 clove garlic, minced
¼ inch piece fresh ginger, peeled and chopped½ cup honey
1 teaspoon sesame oil
3/4 Cup chopped fresh cilantro leaves 1/2 teaspoon salt ¼ teaspoon fresh ground black pepper 3 Tablespoons water

12 oz cooked, warm Japanese Noodles
½ Cup chopped green onion (green part only)


Heat olive oil in a 12 inch non-stick skillet over medium heat. Place chicken tenders into hot pan and cook for 5-6 minutes, until almost cooked through.
Meanwhile place jalapeno, garlic, ginger, honey, sesame oil, cilantro, salt and pepper into a food processor. Process until nearly smooth. Scrape sides of bowl and add water. Process until smooth. Pour sauce over nearly cooked chicken tenders. Cook for an additional 2-3 minutes or until chicken is cooked through.
Place warm cooked Japanese noodles into a large serving bowl. Pour sauce and chicken tenders over noodles. Garnish with chopped green onion and serve.

Borden's Cheese Win 2006


Breakfast Frittata Italiano

2 Tablespoons extra virgin olive oil
¼ Cup finely diced white onion
¼ Cup finely diced red bell pepper
1 Cup chopped prosciutto
½ teaspoon minced garlic
10 eggs
¼ Cup half and half
¼ teaspoon salt
¼ teaspoon fresh ground black pepper
2 Tablespoons thinly sliced fresh basil leaves
1 ½ Cups Borden Six Cheese Italian Shreds

Preheat oven’s broiler. Place eggs, half and half, salt and pepper into a large bowl and whisk until well combined. Set aside.

Place olive oil in a large 10 inch oven proof skillet over medium heat. When oil is hot, add onions, bell pepper and prosciutto. Saute for 3-5 minutes or until prosciutto is crisped and vegetables are tender. Add garlic and cook for 2 minutes. Add egg mixture and cook until just starting to firm up, but still loose, scraping down sides to evenly cook. Sprinkle with basil and Borden’s Six Cheese Italian Shreds.


Place skillet 5-6 inches under oven’s broiler and cook for 3-5 minutes or until eggs are firm and cheese melted. Transfer frittata to serving plate, cut into wedges and serve.

This was a great cook-off. It started in Phoenix where I won and landed a spot in the National Mac and Cheese Cook-Off in Portland. We had the best time sight seeing in Portland. I came out with 2nd Place
